Did you ever notice that when you start thinking about a new topic, hobby or interest; information suddenly appears “out of the blue?” We term the phrase, “What a coincidence!”

This happened to me after a trip to China when we returned to the States. Our journey raised many questions about life in China versus life in the United States. Did the Chinese face the same challenges that the United States faced? How did our lives differ?

Upon our return to the States, the news media coverage about China was everywhere! So I began to research many questions that I had been contemplating for some time. Of course with the onset of the Internet and the introduction of news coverage from cable and satellite channels media outlets, consumers are inundated with news stories from around the world. Headlines inform readers of the latest natural or man-made disasters and how the aftermath may negatively impact our health long term. Everything from oil spills, hazardous waste spills to possible food contamination from pesticides, unsafe tap water and even lead and mercury poisoning only to name a few.

The information can be alarming and yet difficult to decipher the impact on our health and which foods to eat and not to eat because the research and reports change daily. The eternal reports informing consumers of the potential that some exported food products to the United States or for that matter; food grown in the United States may be contaminated are definitely cause for alarm when planning a trip to your nearest grocery store.

And if you are like me, you scrutinize the food you place in your grocery cart and start reading every food label carefully. Should I eat organic? Should I become a vegan? Have I been eating GMO (Genetically Modified Organisms) food and did not even know it? Obsessive! Not when it comes to my health. I have always tried to make healthy choices!
